Gluten-free S’more Cookie Bars
- 1 cup heavy whipping cream
- 2 ½ cups Gluten Free Chocolate Chips
- 7 cups Gluten Free miniature colored marshmallows
- 1 package Mom’s Graham Crackers Mix, prepared & broken into bite-size pieces
- Prepare Mom’s Gluten Free Graham Crackers Mix as indicated on the package. Take ½ of the final batch and break into bite-size pieces. The other ½ will not be used--you can freeze, double the batch, eat as is, or save for later!
- Line 9-inch-square baking pan with heavy-duty foil.
- Heat cream in a medium saucepan over medium-high heat for 1 to 2 minutes or until bubbles appear around edges. Remove from heat. Add chocolate chips; stir until smooth. Cool, stirring occasionally, for 10 to 12 minutes. Add marshmallows; stir to coat. Gently stir in graham cracker pieces until combined.
- Spread mixture into prepared pan; press down lightly. Refrigerate for 2 hours or until firm. Cut into bars.
Makes 32 bars.
