Gluten-free Hearty Beef N' Potato Casserole
4 cups gluten-free frozen potato rounds
1 lb. lean hamburger
1 pkg. frozen broccoli, thawed
1 cup cheddar cheese, shredded
1 medium tomato, chopped
1/3 cup milk
½ cup chopped onion
¼ tsp. garlic powder
1/8 tsp. pepper
Place potatoes in bottom and up sides of a greased 8X12 inch greased casserole dish.
Bake uncovered at 400° for 10 minutes. Meanwhile, brown hamburger with onions, and drain. Stir beef, broccoli and tomatoes together and place in potato shell.
Prepare Cream of Celery soup as directed on package equivalent of one 10.5 oz can of condensed soup, according to package instructions. Add milk, ½ C. cheese and spices. Pour over hamburger mixture. Cover with foil and bake for 20 minutes, uncover. Top with remaining cheese and bake additional 2 to 3 minutes.
