Gluten-free Cheesy Potatoes
- 2- 2.4 oz. packages Mom's Place Gluten Free Cream of Chicken Soup mix
- 2 C. Sour Cream
- 2 TBLS. Butter (melted)
- 2 C. grated Cheddar Cheese
- 1 bag shredded Hash Brown Potatoes (defrost in microwave for about 2 min.)
- Optional: add 2 - 4 TBLS. browned Onions
Preheat oven to 375 degrees. Reconstitute the Mom's Place Gluten Free Cream of Chicken Soup, just as package instructions indicate. Microwave for 2-4 minutes. Stir frequently. Stir together all liquid ingredients, and then stir in hash browns and add 1 cup of cheese. Pour into 9x13 pan. Top with remaining grated cheese. Cover with non-stick aluminum foil and bake for 30 - 40 minutes - it should be bubbly around the edges. Remove foil and cook an additional 15 - 20 minutes until cheese is bubbly & crispy on top.
Enjoy with a Gluten Free ham, covered with Mom's Place Gluten Free Honey & Brown Sugar Ham Glaze, and your favorite veggie! (broccoli, cauliflower, or petite peas are perfect)!
