Gluten Free Chicken Cordon Bleu
Chicken Cordon Bleu Ingredients -
10 - 12 chicken tenders
12 slices of gluten free deli ham
6 - 8 slices swiss cheese
1 cup Mom's Place Gluten Free Bread Crumbs (made from Best Sandwich or "I Can't Believe It's Not Wheat Bread, cut in cubes and dry)
1 cup parmesan cheese
6 - 8 eggs
Honey Mustard Sauce Ingredients -
1 cup mayonnaise
1 tsp. mustard
1 Tbsp. honey
Preheat oven to 350 degrees. Lightly grease a 9x13 baking dish with cooking spray. Layer a row of bread crumbs & 1/4 cup parmesan cheese and some swiss cheese, then layer chicken tenders in dish, and then layer row of ham, swiss and ham again. Then make second layrer of chicken tenders, ham swiss cheese, bread crumbs and remaining parmesan cheese. Whip eggs in separate bowl and pour evenly over the baking dish, being certain to get some of the eggs around the edges of the pan (this will mix with the cheese upon baking and make it cheese, moist and yummy!). Bake for 1 1/2 - 2 hours or until cheese is bubbly and the dish is not watery.
For the Honey Mustard Sauce - mix ingredients together in a small mixing bowl. Add additional mustard or honey to desired taste. Place in refrigerator for at least 1 hour before serving.
Serve the chicken cordon bleu with the honey mustard sauce and enjoy with a side baked potato, rice or Mom's Place Gluten Free Quinoa Pasta and a vegetable. Your family will love it so much there will be no leftovers!
